Cooking Group


So, last night I went to this cooking group with some ladies from church. It was really fun and very enlightening. I really enjoyed getting together and bouncing ideas off of one another. Anyway, a friend of mine has been asking me for a recipe for Chicken Cacciatorre so in the spirit of cooking here ya go!


You will Need:


* Approx. 3 med chicken breasts


* 1 Jar of fave spaghetti sauce (or homeade)


* Pasta of choice, I use whole grain penne (if using Penne you will need the whole box, spaghetti you will just have to eyeball amount)


* EVOO


* 2% reduced fat Mozzarella cheese (1 bag)


* 1 large casserole dish


- Begin by drizzling EVOO in skillet. Butterfly Chicken breasts and cook in skillet on med high till golden brown. While Chicken is cooking Boil pasta until Al Dente, strain and place in caserole dish. Cover pasta with sauce, but leave a little sauce left over. When chicken is done place butterflied chicked breast overtop pasta and sauce and then pour rest of sauce over chicken. Then sprinkle Mozzarella over entire dish as heavily as you would like. You may like to add a little basil or parsley as a garnish. Bake on 375 for 15 until cheese is melted and Bon Appetit!!
BTW- It makes a pretty big dish, so great for large familys or leftovers ( can anyone say freezer?? LOL) It's super easy, really good, and pretty healthy too!!

girl...all the cooking stuff is greek to me. I've never been much use in the kitchen though! Luckily Timmy loves to cook and is good at it or else I just don't know what we would do! ha! Thanks for saying my life is interesting..I feel like I have to dig deep for something interesting. lol! :) And yes we do need to get together again! Soon!
